What makes it great Hand-plucked early before Spring Equinox, the buds and leaves are dried and pan-fired in a large wok for 15 minutes, before pan-frying again to produce the lovely, elongated shape you see. Till today, it is mostly produced by hand as the wok frying involves great skill, to enhance the flavours of its classic broad, large leaves.
